putting eggs to the test

I recently made the switch from regular to organic eggs. I eat a lot of eggs, about 1-2 a day, so I thought maybe I should shell out the $4+/dozen since it still only comes down to 33 cents an egg. Will this small investment make a difference in my health long-term? I hope so. I mean, that's why I'm doing it.

But, let's talk about the here and now. Do organic eggs taste, feel, and look better than regular? My data is purely qualitative since I don't have a food scale or the ability to measure the nutritional content of any food. Here are the results of the quick and dirty experiment I did this morning.


the contenders:

Jumbo Grade A eggs from 99 Ranch Market (cost: 99 cent/dozen)

vs.

Organic Extra-Large Brown Eggs from Sprouts market (cost: $3.50/dozen sale price)







appearance:

Organic: brown

Regular: white

other than color, they pretty much look the same in shape and size








I soft-boiled all four eggs in the same pot for 4 minutes and peeled the shells.

They look and feel about the same to me.

same cooking time, but I didn't account for any difference in weight or size

Organic (top): cooked more thoroughly, yolk a little more pale than the regular egg

Regular (bottom): yolk and inner egg whites less cooked, yolk darker yellow in color

Taste:

the regular egg tasted more "yolky" to me and I like the stronger flavor.


Discussion:

I like the taste of the regular egg better than the organic, but I'll stick with the organic eggs and try decreasing the cook time to see if that affects the flavor and texture. I'm also going to look for orange yolk eggs since I heard they are delicious.
